This low-carb dinner is rich, satisfying, and packed with flavor. Tender chicken breasts are seared to golden perfection and smothered in a creamy garlic butter sauce loaded with fresh spinach. It’s a one-pan meal that’s quick, easy, and perfect for busy weeknights.
Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs)
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 cups fresh baby spinach
1/4 cup chopped parsley (optional, for garnish)
Preparation
Prepare the ChickenSeason both sides of the chicken breasts with paprika, Italian seasoning, salt, and pepper.
Sear the ChickenHeat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
Make the Garlic Butter SauceLower the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
Create the Creamy Spinach SaucePour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until fully melted and the sauce thickens slightly. Add the spinach and cook for 2-3 minutes until wilted. Taste and adjust seasoning with salt and pepper.
Combine and ServeReturn the chicken to the skillet, spooning the creamy sauce over each piece. Let it simmer for another 2 minutes to reheat the chicken. Garnish with chopped parsley if desired.
