About the Recipe

Creamy Alfredo sauce, tender shrimp, and roasted spaghetti squash come together in this low-carb dinner that’s perfect for satisfying your pasta cravings. It’s hearty, flavorful, and packed with nutrients!

Ingredients

  • 1 large spaghetti squash (about 3 lbs)

  • 1 lb large shrimp, peeled and deveined

  • 2 tablespoons olive oil, divided

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/4 teaspoon red pepper flakes (optional)

  • Salt and black pepper to taste

  • 1/4 cup chopped parsley (optional, for garnish)

Preparation

  1. Roast the Spaghetti SquashPreheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the cut sides with 1 tablespoon of olive oil and sprinkle with a pinch of salt and pepper. Place the squash cut side down on a baking sheet and roast for 35-40 minutes, or until the flesh is tender and easily shredded with a fork. Let it cool slightly, then use a fork to scrape out the strands into a bowl.

  2. Cook the ShrimpHeat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then cook for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.

  3. Make the Alfredo SauceIn the same skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant. Slowly pour in the heavy cream, stirring constantly. Let it simmer for 2-3 minutes.

  4. Add Parmesan and SeasonStir in the Parmesan cheese until fully melted and the sauce thickens slightly. Taste and adjust seasoning with salt and pepper.

  5. Combine and ServeAdd the cooked shrimp to the Alfredo sauce and toss to coat. Serve the sauce and shrimp over the roasted spaghetti squash strands, tossing gently to combine. Garnish with chopped parsley if desired.
